Beef & Chickpea Greek Inspired Meatballs
Meatballs are an underrated and versatile food. They can be prepared quickly, added to various meal styles for a protein boost, and frozen for a convenient option during time-crunched dinners.
These Greek-inspired meatballs come with an extra benefit - chickpeas. Chickpeas serve as a binding agent for the meatball while providing a fibre bonus.
I enjoy adding them to a warm pita with homemade tzatziki and quick-pickled onions, but these meatballs can be used in any way you prefer. You could add to orzo pasta salad or tossed into a Greek salad.

Ingredients
Meatballs
1lb of ground beef
1 cup of chickpeas
1/2 cup fresh dill, chopped
1 tbsp oregano
1 egg
1 tbsp red pepper flakes
1 tsp salt
1 tsp black pepper
1 lemon, juice
Directions:
Add chickpeas to a food processor or blender and pulse until it reaches a rough texture.
Add chickpeas, dill, oregano, red pepper flakes, salt, pepper and lemon juice to ground beef in a bowl. Mix thoroughly with your hands.
Form meatballs and add to an air fryer tray.
Cook in the air fryer at 400°F for 15 minutes or until the meat has reached an internal temperature of 160°F.
Remove from the air fryer and add to your dish of choice. For souvlaki-styled pita, add to a warm pita and top with tzatziki and pickled onions.
