French-toasted baguette

These little bundles of carbohydrate joy are a great way to start your weekend. Top with your favourite fruits and maple syrup for a brunch that will please everyone.

Recipe

Time: 25 minutes
Servings: 4 (with side); 2 (on it’s own)

Ingredients

1 small French baguette
3 eggs
¾ cup milk
1 tsp vanilla
1/4 tsp cinnamon
1/4 tsp nutmeg
2 cups of fruit of choice (strawberries, blueberries, pears, peaches)
1 tbsp butter
maple syrup, to taste

Directions:

  1. Wash and slice fruit of choice

  2. Cut baguette into 12-16 even slices and arrange in large glass pan.

  3. In a bowl, whisk together eggs, milk, vanilla, cinnamon and nutmeg.

  4. Pour egg mixture over bread slices. Soak bread in egg mixture for approximately 3 minutes, turning over once until soaked through.

  5. Melt butter over medium heat on a frying pan or griddle

  6. Place slices of bread on frying pan without crowding the pan. You may need to cook in two batches.

  7. Cook for about 2-3 minutes each side, until they are a dark golden brown

  8. Once cooked, plate 3-4 pieces per person, topping with fruit and maple syrup
