Burrito Flatbread

This recipe came about from a “I have nothing but need to make something” moment, and it surprisingly impressed.

A lot of these ingredients are things I like to keep around for those exact moments. Frozen leftover tomato sauce, cans of beans and frozen flatbreads. Keeping pantry and freezer friendly foods stocked is key to helping your create a healthy meal in a pinch with the idea that you use these ingredients as your base and add whatever fresh ingredients you have around.

Here is an great option for a quick weekend dinner, that is a nice alternative to your usual flatbreads.

Recipe

Time: 20 minutes
Servings: 4 servings

Ingredients

Bean Spread
1/2 can of pinto beans
1/2 cup of tomato sauce
1/2 jalapeño, diced (**you will use other half below)
1/4 cup of cilantro, chopped
1 lime, juiced
1 tsp msg (or salt)
1 tsp of pepper

Flatbread
2 large flatbreads
1 cup of corn (canned, fresh or frozen)
1/2 sliced jalapeño
1/2 red onion, sliced
1 cup of shredded cheese
1 cup lettuce (romaine, Boston or iceberg), chopped

Directions:

  1. Preheat oven to 400°C

  2. Line baking sheet with parchment paper or reusable liner for easy clean-up

  3. Add pinto beans, tomato sauce, jalapeño, cilantro, lime juice, salt and pepper to a food processor or blender. Blend until smooth

  4. Spread mixture evenly over two flatbreads

  5. Top flatbreads with corn, jalapeños, red onion and cheese

  6. Place flatbreads on baking sheet and cook in oven for approximately 10-12 minutes until cheese is melted

  7. Remove from oven and let it cool for 2-3 minutes

  8. Top with lettuce, cut each flatbread into 4 pieces and enjoy!
