Air Fryer Roasted Chickpeas

I love making roasted chickpeas as a snack to keep at work, but somehow my intentions rarely came to fruition. My air fryer has changed this. This recipe took 5 minutes of my time. For this version, I opted for something with a little more spice but you can experiment with any spices or herbs you wish. I would suggest lemon & dill for a fresh option, or cinnamon & maple syrup for something more sweet.

Recipe

Time: 20 minutes
Servings: 4 servings

Ingredients

1 large can of chickpeas,
1 tbsp of olive oil
1 tbsp of smoked paprika
1 tsp cayenne
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
Salt & pepper to taste

Directions:

  1. Preheat oven to 400°C (if your air fryer requires this step).

  2. Drain and rinse chickpeas. Add to a large bowl.

  3. Add spices to a small dish and whisk together (I find this helps to better blend the spices!).

  4. Add olive oil to chickpeas and mix well. Add spices to chickpeas and mix until well coated.

  5. Pour chickpeas into basket of air fryer. Cook at 400°C for 12-15 minutes, shaking 2x.

  6. Cook until chickpeas are toasted thoroughly. They should have a nice crunch when you bite into them.

Chickpeas are a delicious addition to your diet. They are a fibre rich protein source that are awesome for snacking. The balance between protein, carbohydrates and fat found in this little legume will help prevent that afternoon slump. They are also a budget friendly choice in the kitchen.
